Red Sweet Peppers, Stuffed With Red Mullets and Herbs

Ingredients
Makes 4 serves
8 medium size red sweet peppers
8 medium size red mullets(fresh not frozen)
A handful of chopped parsley and basil
Garlic ..a clove peeled but not chopped
Salt and pepper and rosemary
1 big onion chopped in rolls
2 table sps vinegar
1 tea sp brown sugar
1 /2 cup extra virgin olive oil
Juice of a half lemon

Method
Wash the fishes and remove their scales and intestines . Put them in a bowl, salt them and add the lemon juice like basting them and let them in the fridge for 1 hour.
Chopped a big dry onion in rolls. Chop the top of the peppers and wash them. Care to remove the seeds. Now, in every pepper, add a pinch of sugar and salt, a leaf of basil , rosemary and drops of EVOO. Stuff the peppers with the mullets and once you stuff them add a tea sp of chopped parsley in every pepper……..When finished this job, salt again the peppers and keep them for a while aside.
Place the onion rolls in a wide and deep frying pan….Add on top of the rolls, some sugar(not too much) and then lay the stuffed peppers on the onion slices. Add olive oil ,garlic , parsley, and rosemary in the frying pan and heat the oil in very low temperature(in the scale of 6 use the mode 2). Close the pan and let the food cooked for 10 minutes. Once onion and garlic change their colors into light brownish, add the vinegar and ¼ glass of water. Close the pan again and cook for another 10 minutes…..At this time the food is ready….. Enjoy….
