Red beans soup with bacon and beef

This is one of our Sunday\'s soup, made the pot with firewood, it tastes sensational, but also is very good and if homemade

Ingredients
500 g red beans
400 g beef meat, finely sliced
250 g bacon, finely sliced
6 red pepper,finely baked, peeled and sliced
2 red onion, finely chopped
5 cloves of garlic, finely chopped
2 tbsp tomato paste
2-3 fresh tomatoes, peeled and chopped
thyme, rosemary & bay leaf
3 tbsp ketchup
1 pepperoni
sea salt & black pepper
extra virgin olive oil
3-4 carrot, peeled and sliced
1 parsley, peeled and sliced
1 tsp cumin



For dumplings:
2 whole egg
about 1 cup flour
sea salt

Method
Put the beans in water for minimum 12 hours.
Baked red pepper on fire in stove, then wrapped on aluminum foil. Let to cool then is easy to peel and slice.
In a pot with water put the beans, some thyme, rosemary and 2 bay leaf for boil.
Heat a large pan with olive oil, onion, garlic, cumin and pepperoni. Let to fry until is soft then put a few rosemary, thyme and bay leaf.
Add bacon ad beef meat and let to fry until is start to be brown, then add carrot and parsley too. Continuous to stir for a few minutes.
Now add red pepper, tomatoes paste, fresh tomatoes, stir then add one ladle of soup from beans. Season with sea salt & fresh ground black pepper.
Now add your meat sauce in the pot with beans and let to cook on medium heat.
For dumplings, mix all ingredients, then use a grated to make dumplings and let to cook a few minutes.
Serve with fresh parsley leaf and toast ciabatta bread.
