this is a great dish too like a anything risotto just I use mashed broccoli and broccoli stock...delicious...
Ingredients
2 cups rice
a good bunch of broccoli
broccoli stock
a good handful of mushrooms
pancetta
onion, finely chopped
1 glass white wine
sea salt and pepper
extra virgine olive oil
parmesan cheese
Method
First, make a broccoli soup:

For risotto:
Heat a large pan, add olive oil and onion. Stir and cook until is soft, then add rice. Continuous to stir and add pancetta and mushrooms too. Keep on heat a few minutes then put a good white wine, let to evaporated alcohol and continuous to add broccoli stock. On the last five minutes to finish add aboute 2 cups of mashed broccoli (from broccoli soup). In final add parmesan cheese and season if is necessary with sea salt and pepper.
When you serve risotto sprinkle little beat extra virgin olive oi and parmesan cheese.
