chicken breast sliced
2 cup rice
1 onion finely chopped
200 g mascarpone
1 glass white wine
1 tbsp butter
750 ml chicken stock
oregano and thyme, finely chopped
extravirgin oliva oil
salt and pepper
For risotto with mascarpone:
Heat a pan with oliva oil and add onion. Still cooking until onion is soft, then add rice. Fry a few moment then add white wine. After wine is evaporated add chicken stock, cover with dill and cook at medium heat. In finaly take out from the heat and mixed with mascarpone. Season with salt and pepper.
Make a marinade for chicken breast from extravirgin oliva oil, oregano, thyme, salt, pepper and chilli finely chopped, then add the chicken breast for minim 30 minutes.
Make skewers and fry on grill each side, then serve with risotto.
