Roast Cod with tomatoes and chorizo

Ingredients
2 cod fillets

1 tin cherry tomatoes in juice

1 garlic glove

1 green pepper

chorizo

1 ball mozarella

Method
[b]Serves 2[/b]

Place the cod fillets in an oven proof dish.
Chop up a green pepper and a clove of garlic and add to the dish with the cod.
Dice a small length of chorizo and add that to the dish.
Evenly pour over the tin of cherry tomatoes, and cover the ingredients in the dish.
Dice a ball of mozzarella into small pieces and add to the top of the fish dish.
Sprinkle with salt and pepper.
Bake at 220 degrees for 30 mins.
Enjoy!

I cooked this recipe for my partner who really" does not like cod in a shape or form "<br /> until now ! he enjoyed it so much that now I am being asked to cook it again. Thanks

I tried this and loved it. Not being a meat eater, I omitted the chorizo and, as I didn't have canned cherry tomatoes, I used fresh. Still came out great! Thanks!
