Roasted Pumpkin, Spinach and Chicken Fettuccine

This creamy Pumpkin dish serves 4
-2 Large chicken breasts
-5 Bacon Rashers
-1 Packet Fettuccine Pasta
-400 ml Light thickened cream
-1 Cup fresh spinach
-1/4 cup Grated Parmesan cheese
-1 Tspoon Cajun Spice
-Cut the pumpkin in to medium sized pieces and Roast in the oven until Soft on the inside and crispy on the outside
-Brown the Chicken and Bacon in a Large saucepan, Remove from the saucpean when cooked
-Meanwhile cook the Fettuccine pasta in boiling salted water
-Add the cream, Cajun spice and spinach into the saucepan, stirring until mixed through.
once the cream bubbles, reduce heat to simmer.
-Stir through mashed up pumpkin, chicken and bacon
-slowly add Parmesan, gently stirring until cheese is melted
-Add fettuccine and gently mix through the sauce.
