Ingredients
8 oz (225g) plain flour
1 teasppon of baking powder
3 oz (75g) butter ( not straight from the fridge)
2 oz (50g) caster sugar
4 oz (110G) currents
1/2 teaspoon ground mixed spice
1 egg,beaten
3 tablespoon of milk
Method
Preheat the oven to 400 f (200 C) or mark 6.Grease the baking sheet.First put the flour and baking powder in the bowl and rub in the butter with the fingers until the mixture resembles breadcrumbs>Add the sugar,currants and mixed spice.Break the egg into a cup or bowl and beat with a fork.Now add the beaten egg and milk to the ingredients in the bowl and mix together with a wooden spoom to make a stiff dough.Spoon small rough heaps of the mixture fairly well apart on the baking sheet and bake in the oven for about 10 to 15 mintues until golden.Remove from the oven and transfer to a wire rack to cool.
