  • - a good amount of rocket lettuce
  • - 2 slices of bresaola
  • - 3 or 4 cherry tomatoes
  • - 1 or 2 ounces of Mozzarella cheese
  • - 1 slice of homemade, toasted bread
  • - a small amount of shaved Parmesan
  • - salt and white pepper
  • - 3 teaspoons of extra-virgin olive oil
  • - 1/2 cup of lemon juice
Put a good amount of Rocket Lettuce in a big bowl and mix it with a little bit of lemon juice and extra virgin olive oil. Take enough Rocket Lettuce for one serving and arrange it on an individual plate. Cut the little cherry tomatoes in halves and arrange them around the Rocket Lettuce on the plate. Cut the bresaola and put several strips over the Rocket Lettuce. Break the mozzarella cheese (passionately, by hand!) in small pieces and add it to the salad. Also, add salt and white pepper, as desired. Then comes the shaved parmesan (again, just enough for one serving) and a little more extra virgin olive-oil.
Serve with a slice of homemade, toasted bread AND love!!

If you really, really love Rocket Lettuce, this is an amazing salad! It makes for a good appetizer or even a good dinner/evening meal. This is a very nutritious and healthy recipe.

Method
