Ingredients
4 Handfuls Torn Salad Greens (of any description)
1 Clove Garlic
5 Cherry Tomatoes
Handful of Sweet Peas
A few Basil leaves
Juice of Half a Lemon
Olive Oil
Sea Salt and Pepper

Method
Finely chop the garlic and throw it into a bowl. Cover it with the lemon juice and add a pinch of salt. Add about triple the amount of olive oil as lemon juice, then whisk with a fork. Quarter the tomatoes and remove the seeds then toss them in the bowl as well. Split open the pea pods and remove the peas; set them aside. Slice the pod at and angle and toss into bowl. Slice the basil and throw it in the bowl with the salad greens. Toss it all together and sprinkle on the peas.
