Salmon -rice salad

Ingredients
Makes 2 serves

100 grms boiled Basmati rice

200 grms salmon fillet(Please…..DONT USE CANNED)

50 grms boiled peas

50 grms boiled green fresh or frozen beans

A handful of parsley

Salt ,pepper

Olive oil

1 table sp lemon juice

2 table sps light Greek yogurt

1 glass of white flavored sweet wine

Method
Soak the rice for a half an hour, in lukewarm water, and boil it for 15 minutes, in salted water. Don’t overcook it…I personally prefer it “al dente”.
Drain the rice and keep it aside.
Boil the veggies for 10 minutes and drain them.
Cook the salmon fillets in water (1 ½ glass …no more)with lemon juice ,salt and wine. Cook it slowly for 10 minutes and keep it aside to cool. Then using a spoon chop (press every fillet carefully …don’t mash it) it in many pieces….
Serve the rice and the veggies in large deep dishes, and mix them with care. The next step is to add the salmon……. In a bowl add yogurt, lemon juice and olive oil, and salt, and pepper, and make a blend.
Once you add the salmon, add a small portion of the blend of the yogurt and mix again…Add parsley and your dish is ready…..So easy…Enjoy!!
