Salmon cannelloni with spinach and mushroom puree and a grilled pepper stuffed with a mixed herb turkey with a dash of horse radish sauce

Ingredients
• Smoked salmon (sliced)
2• Ground turkey 100 grams
3• Bell Pepper half
4• Button mushrooms 80 grams
5• Baby spinach 100 grams
6• 1/4 onions
7• Chives
8• Dill
9• Dried Parsley
10• Dried Tarragon
11• Dried Oregano
12• Balsamic Vinegar
13• Horse radish sauce
14• 1 Clove garlic
15• Salt/Pepper
16• Coriander

Method
Steps:

Spinach and mushroom puree:

Chop the onions, garlic and mushrooms finely.
Heat a wok , add a table spoon of light olive oil and fry the onions and the garlic until fragrant and caramelised .
Add the spinach ,mushroom, a pinch of salt and pepper and stir fry until soft.
Put the stir fry in a food processor along with chives, dill and a bunch of coriander and blend until smooth and put it aside.
Salmon cannelloni

Set the smoked salmon flat and with the spinach mixture in a piping bag, pipe it cylindrically on the salmon and delicately roll it and put it in the fridge to cool.
Grilled pepper stuffed with mixed herb turkey

Take the ground turkey and put it flat on a chopping board. Mix it with some chopped onions, parsley, chives, dill, oregano and tarragon with a pinch of salt and pepper to season and mix it into a ball. Set aside to rest in the fridge
Cut the bell pepper in half, take out the core and seeds.
Season with pepper and grill it for 5 mins each side.
Grill the mixed herb turkey on a hot grill for 5 minutes on each side.
Chop it up and stuff it into the pepper and season with parsley and pepper.
Plate it up with a dash of the spinach puree mixed with a table spoon of balsamic vinegar and lemon juice, place the stuffed pepper on top and the salmon cannelloni on top of the stuffed pepper.
Sprinkle with chopped chives and a julienne of the pepper with a dash of horse radish sauce on the side.
