Making pesto sauce: in mortar I mix basil leaf, pine seeds, parmesan and extra virgin olive oil.
Grease one salmon file with pesto sauce and cover with second salmon file, like an sandwich.
Spread pastry dough and put in center your sandwich file. Brush around with egg wash.
Packs your salmon on pastry dough, place on nonstick tray, brush with egg wash and mark the pastry using the back of a small knife to make a cross hatch. Finally season the salmon parcel with salt and pepper.
Bake in the oven for about 25 minutes, or until the pastry is golden brown and crisp.
Remove the salmon from the oven and allow to cool slightly. Sprinkle with fresh lemon juice and green salad.
