Ingredients
1 serve
1 fillet of salmon
1 medium potato
100grms green beans
30grms capers
a handful of parsley
2 tiny tomatoes
1 glass of white wine
pepper seeds
salt and herbs(marjoram,thyme,oregano)
a half of a small onion chopped
FOR THE SAUCE
3 table sp extra virgin olive oil
juice of half lemon
1 tea sp vinegar
1 tea sp mustard
1/2 tea sp sea salt
1/4 pepper powder
herbs (basil,mint,marjoram,oregano)
Method
Ok its a little complicate but believe me worths a lot....
Marinade the fillet with the herbs and salt. Lay it in the fridge for at least 3 hours.
In a casserole boil the green beans for 15 minutes in salty water then drain them and Set aside.
Boil the potato without peel it, for 20 minutes.
In a small casserole add 1 glass of water and the glass of white wine. Set the fire in the lower level and add pepper seeds and salt. Put the salmon fillet in the casserole and boil it in a slow fire for 15 minutes.
Making the sauce
Put the olive oil ,the mustard ,the lemon juice,the vinegar ,the capers salt and herbs(basil ,mint oregano,thyme...) in a bowl and mix them well till the liquid turn dense ......
Now in a big plate make a base of chopped onion and lay on top the salmon fillet.Then put the beans and the potato and decorate with the tiny tomatoes and chopped parsley. Add the sauce, and dont forget to drink a glass of white wine..........
