This a amazingly tasty and light dish. Perfect for lunch or dinner. The fresh pineapple gives this a brilliant flavor. Ingredients
The Stuff:
2 Salmon Fillets (about 1 lb)
1-1/2 Cup diced fresh pineapple
2 medium tomatoes
1 red pepper
1/2 medium white onion
1/2 cup olive oil
1/2 tbsp• thyme
1/2 tsp• paprika
1/4 tsp• cumin
2 cloves garlic
1/3 cup fresh chopped cilantro
1 tbsp• fresh grated ginger
salt and pepper to taste
