A simple pie my grandmother used to do, with peanuts. Simple and delicious.

Ingredients
5,25 oz (150g) unsalted butter, room temperature
2 cups (250g) sugar
3 eggs yolks
10,5 oz (300g) cornstarch cookies
2 cups (300g) peeled peanuts, diced
1,76 lb (800g.) whipped cream
Method
1 and 2 - Blend in peanuts.
3 - Mix beaten peanuts and whipped cream. Put aside.
4 - In the bowl of an electric mixer fitted with the paddle attachment, beat butter and egg yolks until light and fluffy, 3 to 4 minutes. Add sugar; beat on low speed until combined, 1 to 2 minutes, scraping down the sides of the bowl as needed.
5 - Blend 3 and 4, that\'s a peanut cream.
6 - Assembling the pie:
one layer of cookies, one layer of peanut cream, finish with peanut cream. Leave it in the fridge for one day to another before serving. Sprincle more diced peanuts over the pie, if you want.
(You can replace peanuts by any nuts you like.)
