  • Sausage meat. I kg
  • Fresh herbs, Parsley, Sage, Rosemary and Thyme.
  • Fresh breadcrumbs about 3 cups.
  • 6 sundried tomatoes in oil.
  • Salt and cracked black pepperpepper,
  • 1 chili, chopped finely,
  • 2 cloves garlic, crushed,
  • knob of grated ginger,
  • blitzed sun-dried tomatoes
  • a handful of yellow celery leaves
  • ,
  • 1/2 cup chopped bacon,
  • One grated onion,
  • One grated carrot,
  • 1/2 cup grated cheese...
  • approximately 2 good handfuls of bread crumb mix.
  • 1 lovely free range egg, beaten.
Take the sausage meat out of 1 kg of sausages by splitting through the skin and scraping into a bowl. In a processor make 3 cups breadcrumbs adding fresh parsley, sage, rosemary and Thyme and whiz together. Remove and place in a bowl. Then add 6 sun-dried tomatoes in oil, and blitz in food processor. To the sausage meat add the salt and pepper to season the meat, then add the other ingredients. Get your hands in there and combine well, form into patties and roll in the herby breadcrumbs. Place patties on a Cling filmed tray, (prevents them sticking, and messy wash up) cover with Clingfilm and refrigerate until needed. Shallow fry, or barbeque, turning as needed, until golden brown and cooked through.
