Sausage, Cabbage and Bacon Casserole

Makes a beautiful really tasty winter casserole, so, large oven proof dish with lid required.
This sounds like a lot of work but only takes about 20-25 mins to assemble. The beauty of it is, once made it can be refrigerated until an hour before you need it.
Serve with fresh crusty bread.

Ingredients
12 Sausages of choice

2-3lb Potatoes

1 Cabbage (savoy\'s good)

6-8oz Bacon pieces or equivalent

1 Onion

2 pints Beef Stock

1tsp Mixed herbs

Small tub, Double cream

Butter, enough to daub over top of dish when assembled

Method
Turn Oven onto 180c

Brown Sausages in pan (no oil required) put to one side to cool slightly. When cool enough slice each sausage lengthwise into 3 pieces.

Brown bacon pieces,and drain on kitchen paper.
Peel and slice Onion and soften in the pan and fat left by bacon, drain.
Chop cabbage (remove stalks) then put in a microwaveable dish and microwave for approx 5 mins, again until softened.
Add bacon and onion to cabbage and mix.

Peel and slice (1/4inch) potatoes , put them in a bowl of water for a couple of minutes, then drain.
Make up your stock and add herbs and double cream.

Take your oven dish and layer your ingredients,
Place 1/3 of cabbage mix into bottom of dish, then lay 1/3 of sausage, then 1/3 of potatoes then season, Repeat leaving yourself enough potatoes to completely cover the last layer.
Finally pour over the stock mixture and add dots of butter, put the lid on and place in hot oven for 40 minutes, take lid off and place back in oven for a last 10 minutes.

I tried this with leftover cooked cabbage from sunday dinner and some left over cooked sausages from breakfast. I did parboil the sliced potatoes for a few minutes first. I only had half a cabbage and 7 links of sausage so halved the stock to one pint and added a slug of wine, it was perfect and really scrummy!

We do like this one. Fairly straight forward, nice different use of cabbage. But do agree with comment about liquid. Have also tried par boiling potato slices for a short while, which I found helps. Very nice though!

Very tasty recipe. I found mine a bit too liquidy and the potatos didn't quite cook. I would recommend taking the lid off earlier in the cooking process
