Scotland Inspired Shortbreads.

Simply delicious shortbreads I made post visiting Scotland!

Ingredients
2 cups all-purpose flour
1/4 teaspoon salt
200 grams unsalted butter, room temperature
1/2 cup powdered sugar
2 free-range egg yolks
1 vanilla stick seeds

Method
Whisk the flour + salt. Set aside.

In a separate ball, beat the butter until creamy.
Add the powdered sugar and beat more, till smooth.

Add the egg yolks, and the Vanilla seeds.

Gradually stir in the flour mixture.

Flatten the dough between 2 parchment papers,
and chill it for an hour.

Preheat oven to 350 degrees F (177 degrees C).
Next, line 2 baking sheets with parchment paper.

Take the chilled dough, remove one parchment paper,
and cut shapes using a lightly floured cookie cutter.

Place on the baking sheets and re-chill for 30 min.

Bake up to 10 minutes, till cookies are slightly browned.

Cool & have fun!
