a nice light dish with herbs and seafood
Ingredients
4 serves
2 big sepias (washed and chopped in symmetric pieces)
1 big onion, chopped
3 fresh onions, chopped
1 leek ,chopped
1 ½ handful of dill ,chopped
3 tomatoes peeled and chopped
1 tea sp of tomato pasta
1 tea sp sugar
1 ¼ tea sp salt
1 tiny red devil pepper
1 glass of dry white wine
4-5 black pepper seeds
½ cup extra virgin olive oil
Method
Wash and clean the sepias and remove all the unnecessary “parts”(I don’t use offal and ink) of them. Cut them in symmetric pieces, not to small and salt them. Set them aside to drain their liquids.
Use a wide pan and put the onions ,the leek and the oil. Add the sugar and the pepper seeds.
Heat the oil gently, for 5 minutes in slow fire. Add the pieces of the sepias and cook them for 5-7 minutes till their color change. Now it’s time to add the wine. Mix well, till the wine be evaporated . Add the peeled tomatoes. Before this you must peeled and chopped them . Add the tomato pasta and the red devil pepper.
Mix well and cook for 3-5 minutes. Add 2 glasses of water and let the food cooked in slow fire. Cook for 35 minutes till the sauce is thicken.
Serve in a big plate and enjoy a bit of red….
