Serves 4. Great as a starter or a main dish. You can serve this with a lime/pepper/salt dipping sauce (1/2 tsp each of salt and grond black pepper along side each other in a little dish with a lime wedge on top).
Ingredients
For the marinated beef:
3/4 thickly cut steak (e.g• rib eye)
1 tbsp fish sauce
2 tsp soy sauce
1/2 tsp sugar
1/2 tsp black pepper
2 tbsp vegetable oil
2 tbsp garlic, finely chopped
For the Salad:
2 tbsp white wine vinegar
1 tsp vegetable oil
1 tsp sugar
1/2 tsp salt
1/2 tsp ground black pepper
1 medium red onion, sliced thinly
watercress and/or tender leaf lettuce
Method
For the beef, combine all the marinade ingredients except the garlic; marinade for approx half an hour or up to 1 day in the fridge.
Whilst the beef is marinading, prepare the salad. Combine the vinegar, sugar, oil, salt and pepper in a medium bowl and stir well. Add the onion and toss to coat it with the dressing. After that you can add the watercress but don\'t toss it yet.
To cook the beef, heat the oil in a heavy frying pan on high heat. Add the beef and allow it to cook on one side, undisturbed until nicely browned, 1 or 2 minutes. Shake the pan to turn the meat and cook the other side. Add the garlic and continue cooking and shaking the meat until evenly browned and done to your liking.
Now toss the watercress with the dressing and pile the beef on top.
