By popular demand here it is, just like my mamma and nonna make it.
500g ripe tomatos, pear toms are best but use the ones you can get, especially ig home grown.
300g frsh green beans, same here, home grown are best
1 red onion or spring onion, if you don\'t like onion use crushed garlic.
Good olive oil
black olives if you wish
good white wine vinegar
oregano of course
Boil the potatoes peel and cut, leave to cool but not completely.
Boil green beans strain and cool.
I find that if these are leftovers they taste better.
Chop the tomatos
slice the onion mix all the veg in a nice big bowl
dress with salt oil, vinagar and oregano
leave in the to stand a few minutes before serving so they can soak up the flavours of the dressing.
