Simple and quick Taco Salad

This is a simple recipe which, for me, takes about 10 minutes. It is healthy, well balanced, and can be adjusted to your desires. Sometimes, I will use \\\"daizu ba-ga\\\" or soy hamburger instead of beef. It makes 4-8 servings, depending on serving size.

Ingredients
1 head lettuce

1 can refried beans (either fat-free or vegetarian works fine with me)

400g ground beef

1 envelope \\\"Old El Paso Taco Seasoning\\\"

1 300g package shredded cheese - mixed, mozzerella, cheddar, your choice.

3-4 tomatoes

1 large bag Doritos or equivalent tortilla chips - plain or your choice of flavor

Italian dressing

- Optional

olives

sour cream

chilis

Method
Wash and hand shred lettuce into a big pot after spin drying (lettuce, not you)

In large frying pan, brown ground beef, mixing in taco seasoning and refried beans. After it is browned completely, cover and let it heat up in the pan for 3-4 minutes, stirring every minute or so.

Cut tomatoes into small, bite-sized cubes, placing them into the lettuce.

Add a LITTLE Italian dressing to the lettuce mix, toss gently to cover it all with the dressing.

Crush tortilla chips - JUST A LITTLE - add to lettuce and tomato.

After the meat mix has been browned and heated sufficiently, add it to the lettuce pot. Add shredded cheese, then mix it all together.

If you wish to add the optional ingredients, add them after they have been served in large bowls.

Last and most important step: EAT!

People can garnish<br /> their own servings with cilantro, sour cream, salsa, lime wedges, red pepper flakes...<br /> Beverage can be non alcoholic margaritas!! It can be done during lunch hour or after<br /> work in the lunch room. Very easy, fun and economical:)
