Simple curd cheese

Ingredients
1 pint full cream milk.
1 lemon - squeezed.
Salt & pepper.
2nd lemon - squeezed.

Method
Heat milk to almost boiling point.
Remove from heat.
Add juice of one lemon and stir gently until milk separates.
Drain whey (liquid) into jug by pouring mix into muslin lined sieve/collander.
Leave overnight in fridge.
Season curds with salt & paper.
Add juice of 2nd lemon to whey & stir in enough suger to taste. This makes a delicious lemony drink refreshing in summer.
Roll curds in chopped chives before serving with crackers.

Add different flavourings to experiment.
