A great brunch dish ... simple to prepare but very tasty and a beautiful presentation on the table. This dish is one of my staples. I can put it together in just a few minutes and also vary the ingredients depending upon what I have on hand. You could use red onion, or a different type of smoked white fish ... chives, a touch of yogurt, or even capers.
Ingredients
1 package smoked trout (2 filets);
1 orange, zested and segmented (and any juice from segmenting);
1 small cucumber, peeled and cut into chunks;
2 shallots, diced;
1/2 tsp horseradish
fresh herbs (mint and basil are good);
a lemon;
olive oil;
salt and pepper to taste;
Method
Combine the shallots, cucumber, orange segments and juice, horseradish, and orange zest. Flake the trout filets into the cucumber orange mixture. Squeeze lemon over and drizzle with olive oil. Sprinkle with herbs, season with salt and pepper, and mix gently. Let rest in the fridge for 15 minutes.
