A traditional dish
Ingredients
4 serves
1 kgr snails(prefer the free range)
1 big onion sliced
a handful of dill,parsley,thyme and mint
1/2 tea sp oregano
1/2 tea sp basil
a brush of rosemary
1/4 tea sp black pepper powder
4-5 pepper beans
1/2 red sweet pepper
11/2 tea sp salt
1 tea sp sugar
3 fresh tomatoes sliced
1/2 cup of tea extra virgin olive oil
1 glass of red dry wine
Method
First of all we must wash and clean the snails very well. It is common practice to put them for 2-3 days in a kettle with flour or oatmeal...This is a method to clean(their interior organic system by eating the flour) the snails and make them more tasty.
When you have already wash the snails , boil them for 5 minutes and then drain them well.
In a wide and deep pan add all the ingredients except snails and cook them in a medium temperature for 15 minutes.Then add the snails and mix them well, with the other ingredients, to change their fragrances,for almost 10 minutes.Add the tomatoes and let your food absorb the liquids...
Add a glass of wine and set the temperature in almost highest mode.
To cook your food better you may add 2 glasses of water. Let the food be cooked for 20-30 minutes and if its need add more water.
After 20-30 minutes the food is ready.
