Sophisticated chilled summer soup - Raspberry soup

Ingredients
660g frozen raspberries, 80 ml Pink Champagne, or Rose Wine, 80ml Port Wine, 2 tablespoons lime juice, 80gm icing sugar, 3 white grapes, 3 red grapes,(seeded and halved) , a few Pink and White Rose Petals, gently washed, rinsed and dried, 5 tablespoons mascapone, a small amount of chopped mint, plus one sprig of mint for decoration• Cupfull of crushed ice, 1 small bottle of refridgerated
bubbly mineral water.

Method
Because of the alcholic content of this wonderfully refreshing tangy soup, this would be better served to adults, goes well at a sophisticated, intimate dinner party.

Allow 1 hour chilling after having prepared this, which is about 10-15mins preparation

Place fruit, (Raspberries) and Port ,Rose or Pink Champagne., icing sugar, squeezed lime juice, iced bubbly mineral water,crushed ice, into a blender and blitz until smooth

Pour into glass bowl and refrigerate for 1 hour

After 1 hour take out of fridge and pour into individual glass soup bowls, or large brandy baloons.Add a heaped soupspoon of lightly whipped mascapone to the center of each serving, after this, scatter a little finely chopped mint, sprinkle the pink and white rose petals on top of the mascapone, and lay the halved red and white grapes flat sides up, around the mascapone and a double sprig of whole leaf, mint,per portion, and serve.... Totally refreshing, and with a wicked kick.!! Luverly Grub...for sure !!
