  • 2-3 large handfuls of sorrel
  • 100gm ground almonds
  • 150ml olive oil
  • 150 ml hot water
  • 3 garlic cloves
  • 75gm goats cheese
  • Small handful of parsley
  • Black pepper
Wash sorrel and place the leaves only in a saucepan with a small amount of water. Cook for 2 -3 minutes until melted down.
Wash parsley.
Peel garlic cloves.
Place all ingredients in a food processor and zizz until smooth and creamy.
Add pepper to taste.
Mix with cooked pasta.

A lovely lemony refreshing pesto. The goat's cheese gives it extra pzazz. Use with any pasta.

Method
