Sourdough pudding

Sourdough starter doesn´t just make good bread, it can also be a delicious dessert on its own.

Ingredients
3 cups sourdough starter
2 tbsp dark honey
1 tbsp malt syrup
1/2 tsp coriander
1/2 tsp salt
1 tsp butter
1/2 tsp sunflower or soy oil

to serve (1 serving):
1 cup milk or soy milk
1 tbsp cloudberry jam

Method
\"Clone\" some starter by taking 1 cup starter and adding 2 cups of rootbeer and 2 cups of flour. Mix together well, let stand in a warm place 2 - 3 days. When completely sour, take out some starter (or you´ll run out of it and can´t make bread the next time). Mix the rest of the starter with malt syrup.
Put a saucepan on medium fire and heat the oil and butter until the butter has melted and has no whiteness in it. Lower the heat, pour in the starter mix, stirring constantly let it simmer until the mixture starts getting darker. Add salt and coriander, stir. When the mixture has gone twice darker, turn off the heat and let it cool a bit. Add honey (not to kill all the good ferments and vitamins) and stir well.
take a few dessert bowls and fill them with the pudding right to the edge. cover with kitchen foil to avoid the surface from drying out. let cool and place in the fridge overnight. They should turn into jello-like puddings.
to serve, turn out on a plate and add some milk or soy milk. Add 1 tbsp of cloudberry jam on top of the pudding. Enjoy on a sauna night.
