  • Serves 6
  • 500g spaghetti
  • approx 100g pancetta, guanciale or bacon, chopped into small pieces
  • 5 egg yolks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small clove of garlic, lightly crushed
  • approx 100g finely grated pecorino or parmesan (or use half and half)
  • Freshly ground black pepper
  • Salt
1. Cook spaghetti according to packet instructions. 2. Meanwhile, heat the olive oil and butter in a large frying pan and fry the pancetta with the garlic till browned. Set aside. 3. In a large serving bowl, beat together the egg yolks, cheese, salt and pepper. 4. Drain the spaghetti (leave a little water clinging to the spaghetti) then add to the bowl, stirring to coat the pasta. 5.Finally, add the pancetta to the bowl, mix well and serve. Serve with a little extra grated Pecorino or Parmesan cheese, although I prefer mine with just an extra sprinkling of black pepper.
