Ingredients
Serves 6
500g spaghetti
approx 100g pancetta, guanciale or bacon, chopped into small pieces
5 egg yolks
1 tbsp olive oil
1 tbsp butter
1 small clove of garlic, lightly crushed
approx 100g finely grated pecorino or parmesan (or use half and half)
Freshly ground black pepper
Salt
Method
1. Cook spaghetti according to packet instructions.
2. Meanwhile, heat the olive oil and butter in a large frying pan and fry the pancetta with the garlic till browned. Set aside.
3. In a large serving bowl, beat together the egg yolks, cheese, salt and pepper.
4. Drain the spaghetti (leave a little water clinging to the spaghetti) then add to the bowl, stirring to coat the pasta.
5.Finally, add the pancetta to the bowl, mix well and serve.
Serve with a little extra grated Pecorino or Parmesan cheese, although I prefer mine with just an extra sprinkling of black pepper.

I don't know what did wrong but the eggs and cheese formed a big lump and it all tasted horrible. I complete embarrassment infront of my boyfriend and his parents!

No the egg yolks are not to be served raw. You are supposed to immediately add the spaghetti to the egg yolks and the heat from the noodles cooks the egg.

I'm just a cuisine lover and ive been wondering why not add the egg yolks, cheese and the pepper in the pan where you fried the pancetta! After stirring the pasta you could add the same pan and cook for a bit!
im a chef and ive cooked this many times and this recipe is the best ive tasted so far.
