You can freeze leftovers of this or make Chicken Parmesan with it...
Ingredients
--1 lb• Roma or Kumato tomatoes
--1/4 cup extra virgin olive oil
--1 lb• sausage, seasoned hamburger meat or meatballs (your choice)
--1 tablespoon minced garlic
--1 teaspoon basil
--1 teaspoon rosemary
--1 teaspoon oregano
--1 bay leaf
--1 teaspoon Morton\'s Nature\'s Seasoning
--1/2 teaspoon red pepper flakes
--1 teaspoon lemon pepper
--1 teaspoon cracked black pepper
-- 1 can Progresso Hearty Tomato Soup
--1/2 cup blackberry wine (optional)
Method
Slice the tomatoes in half and lay in an oven safe roasting pan. Put garlic, olive oil, spices, (and wine if wanted) into food processor to blend. Pour over tomatoes and roast under broiler, stirring occasionally for 10 minutes. Meanwhile, put the sausages or meatballs into a grill pan to cook. After 10 minutes, squish the tomatoes with a potato masher and put roasting pan back into oven for another 15 minutes. Cut sausages into coins (if meatballs leave as is). Carefully pour tomatoes and juices into food processor and puree. Pour into microwave safe dish with meat and tomato soup. Microwave for 5 minutes.
