Ingredients
Serves 2
170 -200g spaghetti
1 red or green chilli (or use both)
1 large clove of garlic, sliced
1 handful of chopped mixed herbs (i used chives, parsley & basil)
A few tbsps of olive oil
Parmesan or pecorino to serve
Method
1. Cook spaghetti according to packet instructions. Drain, saving a little of the cooking water.
2. In a large frying pan, gently heat the olive oil and add the sliced chilli and garlic. Cook for about 30 seconds.
3. Add the spaghetti to the pan, then the herbs and a couple of tbsps of the cooking water. Stir well then serve straight away with a little grated parmesan or pecorino cheese.
