  • 5 serves
  • 400 grms spaghetti
  • A handful of basil(chopped)
  • A handful of capers
  • 4 big red matured tomatoes(peeled and chopped)
  • 2 cloves of garlic
  • 1 1/2 tea sp salt
  • ½ tea sp pepper
  • 1 tea sp sugar
  • A handful of fresh thyme(chopped)
  • ½ cup extra virgin olive oil
  • ½ glass white dry wine


Boil spaghetti for 8 minutes in a casserole with salted water. Keep a glass of the water you boiled the spaghetti aside.
Drain them and keep them aside . Care to keep them warm.
In a deep sauce pan , heat the oil and add garlic. Cook gently for 5 minutes and add the chopped tomatoes. Cook till all liquids evaporated.Then add a glass of the water you kept aside and the wine.
Cook in a slow mode temperature. Add all the herbs. Once the sauce is thicken you know your sauce is ready……serve spaghetti in a big plate with the sauce on top….
