Spicy Mushroom and Mint Cous Cous Salad

When you’re pressed for time and need something healthy, flavourful and ready in minutes – this is perfect. Like today – on the move getting kids to school, dogs to the park, documents to clients and more. 1:30pm and starving – don’t’ want to get greasy takeaway or dodgy Indian – boil some water, raid the pantry and fridge and get cooking! I found Shitake mushrooms, spring onions, mint and smoked turkey – you can be bold and experiment.

Ingredients
1 cup cous cous
1 cup boiling water
1 tbsp olive oil

˝ cup Shitake mushrooms – sliced
4 spring onions – chopped
3 Cloves Garlic – chopped
3 slices smoked turkey - chopped
1 generous cup Mint – roughly chopped
1 red chili sliced (optional – if you like the heat)
1 cup snow pea shoots (you can use a few
1 tbsp chili flakes
1 tbsp ground cumin (lightly toasted)
4 tbsp olive oil
3 tbsp lime juice (2 juicy limes)
1 tbsp salt

Method
Make the cous cous in a generous salad bowl: Mix oil and hot water and pour over the cous cous. Mix and cover while you prepare the rest of the ingredients.

Heat 1 tbsp olive oil in a frying pan. Fry mushrooms, garlic, fresh red chili and spring onions till brown and fragrant.

Lightly fluff cous cous with a fork. Stir through the mushrooms and all remaining ingredient.
Taste and adjust seasoning

If you can, leave it in the fridge for at least 30 mins otherwise just eat it as it is…
