I have just bought the 4th book of JO to my collection and this rice is based on his spicy rice with some changes, he loves olive oil, I love ghee.
4 cups basmati rice
3 small carrots
2 tsp turmeric
3 tsp dry red chillies
1 lemon juice
1 tsp ground pepper
2 tsp salt
3 tbs ghee
2 tbs parsley
Cook the rice in water and a little bit of ghee and salt, then reserve.
Grate the carrots and mix with all the ingredients in a pan, fry the chillies and the other spicies, add the carrot and cook for about 15 minutes then add this mixture to your cooked rice.
Squeeze the lemon on the top before you serve.
Stir and serve with some parsley on the top.
