Spicy Roast Chicken - Malay Style

Simple recipe. The marinating sauce is used for the dipping sauce too. Fast one... make marinating sauce, marinate chicken, roast chicken, cook the sauce balance and eat together. Recommended to eat with Beriani rice, white rice or simply like that.

Ingredients
Blend ingredients:
1) 1 onion
2) 5 cloves of garlics
3) 4 cm of ginger
4) 4 cm of galangal
5) 100 g chili (reduce to personal preference)
6) 1 tea spoon tumeric powder
7) 8 stalks of lemongrass

Others:
8) 500 ml coconut milk
9) 4 tumeric leaves (thinly sliced)
10) Sugar and salt
11) Chicken

Method
1) Make a paste out of the blend ingredients (blend with some water)
2) Pour paste into a bowl
3) Pour in coconut milk, stir and mix well
4) Add in sugar, salt and mix well
5) Pour some on chicken to marinate, save the sauce balance
6) Pour the sauce balance into a pot and put it on stove to simmer
7) Add in the thinly sliced tumeric leaves
8) Simmer till the sauce thickens (or to your liking), then set aside
9) Roast marinated chicken (like you always do)
10) Serve roast chicken with the sauce

SIMPLE! Right? :)
