When I was a kid, my mother used to make \'Gewürzkuchen\' (Spice Cake) which I adored. Now I translated the recipe to muffins. A nice little Xmas treat.
Ingredients
Dry ingredients:
100g ground almonds
125g full spelt flour
125g plain wheat flour (vary combination of flours to your liking)
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1 1/2 tsp baking powder
1 tsp baking soda
2 tsp cocoa powder
Wet ingredients:
140g sugar
1 egg
300g butter milk
80 ml vegetable oil
Icing:
80g icing sugar
1/2 - 1 tsp cinnamon (to your liking)
1 tsp lemon juice
1-2 tbsp water
Method
Preheat oven to 180°C.
Grease your muffin pan or put paper cups into the pan.
Mix well dry ingredients.
Mix well wet ingredients.
Carefully fold unter dry ingredients until wet.
Fill batter into muffin pan.
Bake for 20 min.
Let the muffins cool down.
Mix icing sugar with cinnamon, lemon juice and water and pour a little on top of each muffin.
