Spinach and rise pie

Very easy and fast! A great way to make kinds eat spinach. If you can\'t use filo, use any pastry but make sure you thin it with a kitchen roller if it\'s too thick.

Ingredients
1 kg of fresh spinach leafs
1 cup of rise
1 small onion
2-3 sheets of filo paste
2 eggs or 1 cup of very light bechamel (White sauce)
little bit of butter or any other kind of grease you prefer
black pepper and salt
2 table spoons of mineral water (can be changed with oil and water mix, or just normal tap water)

Method
Sauté the onion with a little bit of salt and butter. Add the spinach and cook until the leafs are soft but haven\'t lost colour. Stir the rise in and turn of the heat. Salt-pepper to taste. Turn up the oven to 220ºC
Put some butter on the whole pan you will use to bake the pie and lay down a sheet of filo letting some of the paste to come out of the pan. Sprinkle some mineral water and lay the other one. Repeat until you have a base of filo. Add the mixture of spinach and rise and cover partially the surface with the filo. Put it in the oven for 10 min. Take it out, cover with mixed eggs (or bechamel) and sprinkle some nutmeg over. Turn the oven on 190ºC and let it cook until golden brown.
Serve hot and with yoghurt.
