Chilli (flakes or fresh)

Method
My boyfriend doesn't cook very often, but his favourite thing at the moment, which I have just taught him to cook all by himself, is fried spring greens. He loves them and now has them with everything; burgers and chips, roast dinners, even curry!
Get yourself some nice greens, chop out the chewy stalk bit, roll up the leaves like a big fat cigar and then slice very finely. (This means you don't have to boil them first- anything that makes for less faffing is a winner on the boyfriend front I think).
To your largest frying pan, add a good glug of olive oil, or whichever healthy kind of oil you fancy. Then, while your oil is still coldish, add a finely sliced clove of garlic, some chilli flakes (or a fresh one if you prefer) and a sprinkling of cumin seeds. Gradually turn up the heat under your pan, but be careful not to burn your garlic. When the cumin seeds start to pop, bung in your greens. Stand back though, as it will all start to spit at this point!
Turn over your greens until they are coated in the lovely oil, then season to taste with salt and black pepper and drain onto some absorbant kitchen towel. Then serve, with any meal you could possibly dream up.
Add some bacon fat if you feel adventurous.
