A classic dish that is cooked especially in summer.....Simple ingredients with a high nutritious value
Ingredients
4 serves
4 medium size squids(washed and cleaned well)
2 courgettes
2 red sweet peppers
8 tiny tomatoes
for the marinade you will need:
1 clove of garlic
4-6 leafs of basil
salt,oregano and pepper(1 pinch of every herb)
4 table sp of extra virgin olive oil
a glass of white wine
for the sauce you will need:
8-10 basil leafs
1/2 tea sp thyme
4 leafs of mint
1/2 tea sp oregano
1 tea sp salt
1/2 tea sp sugar
the juice from a whole lemon
2 tea sp vinegar
3 tea sp soy (substitute of cream fresh)
Method
Ok to make this dish you have to do a preparation....but dont be afraid. Its easy to be done.
Lets see how you can make the marinade.
Mash a clove of garlic and add the herbs together, with all the other ingredients.
Try to make a pulp from these herbs. Mix this pulp with the olive oil.
Clean and wash the squids. Dont cut them in slices and let them as it is (dont spoil their bag shape, this will help them baked better). Make some clefts with a sharp knife in the outer part of their flesh. These clefts will help the marinade to be absorbed better, in the squid\\\'s flesh.
Put the squids in the utensil you have made the pulp and make sure that the marinade will cover all the parts of them, especially the inner parts.
Set the squids in the fridge for about 3 hours. This will let the flavors and the juices of the marinade, been absorbed in the flesh of the squids.
The same time you have the squids in the fridge you can bake the veggies.
Having sliced the courgettes and the peppers you can treat them like the squids with the marinade you have made.
In a grill pan place the veggies and bake them for 5 minutes from both sides(5+5).When the veggies will be ready add sea salt(drizzle), and set them aside.
Lets see now how you can make the sauce, that is actually easy to be made.
Add all the ingredients except the liquids( oil and soy cream, etc), in a chopper. Chop them until they make a pulp. Now add the lemon juice,the vinegar, etc.... the olive oil and the soy cream. Mix well using again the chopper. the soy cream will help the sauce be thick.Your sauce is now ready. You may put this sauce in the fridge in order to be kept fresh and cool.
Now its time to bake the squids.
In the same pan place the squids and set the fire in slow mode.
Bake them for 4 minutes from both sides(4+4), and then \\\"throw\\\" the glass of wine on them. Let the alcohol being absorbed and the serve the squids as you can see in the pic.

sorry for the failure on the title....its obvious that the squid would never lied.....
