Ingredients
Serves 2 generously
Guacamole
1 ripe avacado, peeled and mashed
1 garlic clove, diced as small as possible
1 shallot, diced as small as possible
1 red chilli• deseeded and finely diced
Juice of 1 lime
Quick and easy salsa
4 large ripe tomatoes (any variety) diced finely
1 small onion, diced finely
Bunch of coriander, finely chopped
Beef burritos
4 tortilla\'s
400g steak (I used sirloin), diced
1 red pepper, diced
1 shallot, diced
1 clove of garlic, finely chopped
1 teaspoon cumin
1 teaspoon paprika
1 red chilli, deseeded and finely chopped
1 teaspoon tomato puree
50g mature cheddar grated, or other cheese if preferred
Salad
Large handful rocket leaves
1 grated carrot
1 red bell pepper, sliced
1 red chilli, deseeded and finely chopped
Stick of celery, sliced lengthways
Spring onions (I left them whole)
Peppadew peppers, stuffed with cream cheese and shredded basil
Method
1) Mix the guacamole ingredients together in a bowl and leave to sit whilst you get on with everything else.
2) Mix the salsa ingredients together in a bowl.
3) Mix the salad ingredients together in a bowl, apart from the peppadew peppers, add these onto the plate at the end.
4) Place a large frying pan over a medium heat and add a drizzle of olive oil.
5) Slowly cook the red pepper, chilli, shallot and garlic from the beef burrito ingredients list until lightly browned and soft.
6) Add the teaspoons of cumin and paprika from the list and stir.
7) Add the diced steak and cook for around 3 minutes. (It cooks quickly so be careful it doesn\'t dry out).
8) Add the teaspoon of tomato puree and stir and cook for a further one minute. Remove from the pan to a warm plate.
9)Warm the tortillas one at a time in the pan for 10 seconds each side.
10) Add a generous spoonful of the steak mix and a sprinkling of grated cheese to each to tortilla and wrap.
Serve with the salad, guacamole and salsa. Enjoy!
