Fillet steak topped with a slice of soft Roquefort cheese, served with creamed greens and sauteed potatoes.
Ingredients
beef steak (I used fillet)
Roquefort (or another blue cheese)
greens (whatever you like)
cream
potatoes
Method
Season the steak and sear it all over in a very hot pan, melt a knob of butter in the pan and baste the steak with it. Put a slice of cheese on top and transfer to a medium oven until it\'s done to your liking and the cheese has melted (about 10 mins for medium rare for an inch thick steak).
Parboil the cubed potatoes for five minutes in salted water, drain and fry in olive oil until golden.
Braise the greens (spinach, savoy or other cabbage) in olive oil and cream until soft.
Serve the steak on a bed of the greens and the potatoes on the side. Drizzle the butter from the pan all over.
