Steak with apple rosti

Ingredients
Apple rosti
250g bread, stale
Clarified butter for frying

1 tablespoon clarified butter
3 apples, quartered, thinly sliced
Reserve bread
100ml apple juice
¼ teaspoon salt, a little pepper

Steaks
1 tablespoon clarified butter
4 pork steaks ( eg tenderloin, each 160g / 2cm thick )
½ teaspoon salt, a little pepper
4 slices ham, folded
100g Appenzell cheese, in 4 slices

Method
Cut the stale bread into thin slices, then in pieces
Heat the clarified butter for frying in a non-stick frying pan. Fry bread in batches until golden brown, remove and set aside.
Melt the tablespoon of clarified butter in the same pan
Sweat the apples slowly for approx. 5 minutes
Add the reserved bread, cook briefly
Add the 100ml of apple juice, continue cooking until all liquid has evaporated
Season with the ¼ teaspoon salt and little bit of pepper, then transfer to prepared oven dish.
Wipe pan

Heat the 1 tablespoon of clarified butter in the same pan
Fry the pork steaks fro approx. 2 minutes on each side and then transfer to the second oven dish
Season with the salt and pepper
Lay the slices of Ham over the steaks

BAKE : preheat oven to 220’C. Bake for approx. 7 minutes, steaks near the top and apple rosti towards the bottom of oven. Serve rosti with steaks.
Preparation time : approx. 50 minutes
Baking time : approx. 7 minutes
2 wide baking dishes, greased

Per person : 27 g fat, 57g protein, 43g carbohydrate, 2689kj ( 642kcal )
