Steamed Cantonese-style Cod

2 cod fillets
half a tsp sea salt
1 tbsp root ginger, finely shredded
2 spring onions, finely shredded
1 tbsp light soy sauce
1 tsp dark soy sauce
half a tbsp groundnut oil
1 tsp sesame oil
1.Pat the cod fillets dry with kitchen roll and rub with the salt. Put the cod on a heatproof plate and scatter the ginger over the top of the fillets.
2.Steam the fish for 12-14 minutes until the fish is cooked.
3.Remove and transfer the fish to 2 warm plates. Scatter the spring onions on top and then drizzle over the light and dark soy sauces.
4.Heat the groundnut and sesame oil together in a small saucepan until smoking,
and then immediately pour over the fish.
