Ingredients
SERVES 2
200g frying steak
2 portions of egg noodles, cooked as per instructions and
tossed with a little sesame oil
3 tbsp groundnut oil
1 garlic clove, finely sliced
half an inch root ginger, chopped
2 shallots, thinly sliced
1 large green pepper, deseeded and sliced lengthways
1 tsp light soy sauce
1 tsp dry sherry
good pinch of salt and ground black pepper
half a tsp sugar
1 tsp sesame oil
FOR THE MARINADE
1 tsp light soy sauce, 1 tsp dry sherry, 1 tsp sesame oil, 1 tsp
cornflour
Method
1.Cut the beef into thin slices, 2 inches long. Put in a bowl and add the marinade and leave for 30 minutes.
2.Heat a wok over a high heat until very hot and then add 2 tbsp of groundnut oil. When slightly smoking, add the beef from the marinade. Stir-fry for 3-5 minutes, until browned. Remove and drain on kitchen roll.
3.Wipe the wok clean and add the remaining 1 tbsp of groundnut oil. Heat the oil and then add the ginger, shallots and garlic and stir-fry for 20 seconds.
4.Add the peppers, soy sauce, dry sherry, salt, pepper and sugar and stir-fry for 2-3 minutes.
5.Return the beef to the wok and stir-fry for 3-4 minutes.
6.Drizzle in the sesame oil and give the mixture a few stirs.
7.Add the egg noodles to a warm bowl and turn the beef and peppers mixture over the noodles.
