Strawberry Nutty Cake

This is a cake of my own invention. I made it when I was craving something sweet and I didn\'t have much in my pantry! So basically I threw in whatever I had and it turned out delicious!

Ingredients
Plain Flour - 2-3 oz
2 Free Range eggs
Mixed Nuts - 3 dessert spoons
4 mashed up Strawberries
1 mashed up Banana
2 dessert spoons of Dry Cranberries
4 crushed Malted Biscuits
3 dessert spoons of milk
1 teaspoon of Baking Powder
2 dessert spoons of Caster Sugar
2 dessert spoons of Muscovado sugar
Tiny pinch of salt

Method
Mix all the dry ingredients until combined, add the salt last otherwise it fights with the baking powder and produces a horrible gloop when the wet ingredients are added! Add the eggs and stir thoroughly then gradually add the mashed up fruit and mix and then slowly add the milk and mix until smooth.

Grease a baking tin with butter or margarine, preheat the oven at 180 degrees and cook for 45 minutes or until springy to the touch - I use a slow cooker so it might take a little longer in an oven.

Leave to cool slightly for 5-10 minutes before turning it out onto a wire rack. Decoration is optional otherwise just eat it with cream or hot custard.
