A delicious risotto that I had in Milan years ago. Sweet and savory. Kids love it.
1.5 cups arborio rice
1 large onion, chopped
6 cups vegetable broth
2 pints fresh strawberries, sliced
Sautť onion in a bit of olive oil and butter
Once onions are soft, add rice and saute a few minutes. Slowly add broth a cup at a time and stir until rice becomes \"al dente\"
Stir in sliced strawberries, a dash of cream a few minutes before serving. Serve with grated parmesan cheese.
