Stuffed Beef Rolls

A superb way of dressing up a Beef. StuFfed beef rolls and a Burguny gravy, served with Spinach Mashed Potatoes.

Ingredients
1 medium onion, sliced

4 teaspoons butter

1 cup sliced mushrooms

1 2-pound rump roast

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon crac! ked pepper

Cooked beef bacon (16 slices)

1 cup beef consomme

1/4 cup Burgundy wine

2 tablespoons cornstarch

1/4 cup water

Method
Saute onion in 2 teaspoons butter with mushrooms for 5 minutes. Remove.

Cut roast into steaks less than 1/4-inch thick. Pound steaks; season with spices. Place 2 slices of bacon on steaks. Spoon 2 tablespoons of vegetable mixture on the long side of each steak. Roll steak up starting at the vegetable edge. Close seam with 2 toothpicks. In same skillet, brown each side with remaining butter on medium high heat for 5 minutes, starting with seam-side down. Add wine to deglaze pan. Add consomme and any remaining vegetables. Simmer, covered, for 3 minutes.
Serve 6-8
60 minutes total time
