Stuffed Bologna Rolls

Yields – 4 servings
3 cups soft breadcrumbs
1 onion (finely chopped)
1 tsp sage
2 tbsp melted butter 1 egg (beaten)
Salt & pepper to taste
8 slices bologna (1/8“ thick)
In a med bowl, combine breadcrumbs, onion, sage, butter and egg. Season to taste. Set aside.
On a cookie sheet (either lined with parchment paper or aluminum foil), place bologna. Place approx 2 tbsp of stuffing on bologna and roll. Secure with tooth picks. Bake at 350 degrees F for 8 – 10 minutes. Remove from oven. Serve with your favourite side dish. Excellent with a good cup of steeped tea.
