Simple, stylish and easy to make...
500 g minced beef
4 cloves garlic finely chopped
1 onion finely chopped
2 spring onion
300 ml vegetable stock
extravirgin oliva oil
Preheat oven at 180\'C.
Heat a pan with oliva and add onion, garlic and then minced beef. Season with thyme and oregano. Cook slowly and add step by step vegetable stock.
From tomatoes take out core and stuff with minced beef. Put on the top little parmesan cheese and sprinkle with extravirgin oliva oil and then add to oven for aboute 25 minutes.
To make a sauce heat a pan with little oliva oil, chili, add garlic, basil leaf finely chopped and tomato\'s core. Cook about 5 minutes then strain and back to cook just sauce until is strenghthen.
Sliced eggplant and zucchini, spring onion, season with salt, pepper and oliva oil and fried on grill.
Serve stuffed tomatoes with sauce and grilled vegetables.
