Sweet Pepper Crostini

1 french baguette
bunch (10-15) of small sweet peppers (sliced)
2 cloves of garlic chopped
3 tbs capers
3 tbs chopped fresh oregano
3 tbs chopped fresh italian parsley
1 hot chili (serrano, habanero, jalapeno) de-seeded and minced
1 small tomato finely chopped
Olive oil (about 4 tbs)
Red wine vinegar (about 3-4 tbs)
Salt and pepper to taste
Fresh Mozzarella Cheese, sliced
Place the sweet pepper, chopped herbs, chili, garlic, capers, and tomato in a bowl. Add Vinegar and olive oil and season to taste. Let this mixture chill out for bit to let the flavors meld. I like mine twangy and kick up the vinegar a bit.
Slice the Baguette on the bias. Drizzle pieces with olive oil and lightly grill until just toasted.
Place a slice of the cheese on baguette and add some of the Sweet Pepper relish to each slice.
